Since its opening, the restaurant has been the centre for the study of primary agricultural produce harvested from the surrounding countryside and locally caught fish. It has also sponsored the creation of the Wine and Typical Produce trail of the North Coast out of Rome. The cuisine follows various Mediterranean traditions while adding its own original touch, especially to the seafood dishes. The menu includes constant references to the history of Italian cooking recalling both traditional country recipes and high-class cuisine.

By car: from Rome, take the A12 Roma-Civitavecchia motorway and exit at 'Torre in Pietra'. Proceed on 'via Aurelia', following the 'Grosseto' direction, until the km 37. At the traffic-lights, turn left and enter into Palo Laziale. After the traffic-lights, proceed straight on, overtake the train line, and turn left into via dei Delfini.
